Vegetarian Rice Paper Rolls

Ingredients

  • 6 Rice paper sheets
  • 1 Tablespoon Coco-For-Garlic Sauce https://www.essiespice.com/shop/coco-for-garlic
  • 1/4 Cup Tofu
  • 1/2 Cup Cooked wild rice, (sauteed in Coco-For-Garlic with firm tofu, cubed)
  • 1/2 Cup Red cabbage, finely shredded
  • 6 Sticks of Steamed young asparagus
  • 1 Avocado, thinly sliced
  • 1 Red Bell pepper, julienned
  • 1 Orange Belle pepper, Julienned
  • 6 Sprigs of Basil
  • Black sesame seeds to garnish

Ingredients for Dressing

  • 1/4 cup vegetable broth
  • 2 Tablespoons creamy almond butter
  • 1 Teaspoon Mango-Chili Medley
  • 1 Tablespoons honey
  • 1 Teaspoon low sodium soy sauce
  • 1 clove freshly minced garlic
  • 1 Teaspoon freshly minced ginger

Preparation of Dressing

  1. Mix it all together and pour in a dish ready to dunk your rolls

  1. Lay your Rice paper sheets flat and get creative with placing different colors of vegetables next to each other so they can show beautifully through the rice paper.
